Keto Chicken Quesadilla 

2 cans of canned chicken

1/2 can of rotel 

1 small red bell pepper

3 tbsp taco seasoning (recipe below)

1/2 cup Mexican cheese

2 tbsp water

Sauté diced red pepper in 1 tbsp olive oil, add chicken, rotel, seasoning, and water. After everything is cooked, put on quesadilla (made with my everything dough below), top with cheese, top with second quesadilla. Place in the oven at 450 to melt the cheese. 

My Everything Dough:

2 cups mozzarella cheese

2 ounces cream cheese

1 tsp baking powder 

2/3 cup of almond flour

Melt mozzarella and cream cheese. Then add almond flour and baking powder.  Mix everything together until well blended. 

Roll out thin 1/8 inch and place on griddle, then flip and cook on other side. 

Taco seasoning:

2 tbsp chili powder

1 tbsp paprika

1 tbsp salt

1 tbsp pepper 

2 tsp ground cumin

1 tsp onion powder

1 tsp dried oregano

1/4 to 1/2 tsp cayenne pepper
