Low carb tortillas

1 3/4 cups shredded cheddar.  I used three cheese blend.  You could use Tex mex or what ever you like. 

3/4 cup almond flour

2 tbsp cream cheese

1 egg

1/2 tsp salt or to taste

1 tsp cumin 

1 tsp chili powder 

1/2 tsp garlic powder 

1 tsp taco seasoning 

1/4 cayenne pepper( I forgot to put in). This is where you heat is! 


Preheat to 350f. Line a baking sheet with parchment paper.

2. In microwave bowl add cheese and cream cheese.  Heat in 30 sec increments. Until melted and creamy

3. To the same bowl add almond flavour and spices.

If it’s to hard knead with hands.  Chill for 30 -60 min 

4.  Place chilled dough between parchment paper, roll out to 1/16- 1/8 th if an in. Thick

5. Bake for 10-12 min

6. Use pizza cutter or sharp knife to cut into triangles .  Carefully separate and return to oven.  Bake another 5 to 10 min. Depending on thickness, until crisp!
