Garlic Bread Meatball Sammys

4 small meatballs

1 Cup Marinara Sauce (I used Raos)

1 egg

3/4 Cup Mozzarella

2 Tbs Almond Flour

Italian seasoning

2 tbs Butter

1 Tsp Garlic Powder

Combine marinara and meatballs in a sauce pan on medium low until heated through. (I found packaged meatballs 4 for 4 carbs. You could absolutely make your own with pork rinds).

While that is simmering, preheat oven to 350. Combine Egg, 1/2 cup Mozzarella, Almond flour and Italian seasoning and make your chaffles. Once complete, melt butter and add garlic powder to your liking. Brush on the chaffles and top with remaining mozzarella. Put in the oven until cheese is melted.

Once chaffle cheese is melted, remove from oven, top with meatballs and add a little extra sauce from the pan. I topped mine with a slice of provolone and served it with roasted Cauliflower and a salad. Enjoy!
