This is my go to bread recipe. It’s fast and doesn’t require many ingredients. Plus, it doesn’t raise my blood sugar like commercial keto breads do! (Ex prediabetic here)


  • 1 Tbs melted butter

  • 2 Tbs Almond flour

  • 1 whole egg or 2 white eggs for less calories and fat

  • 1/4 tsp baking powder

  • A pinch of salt

  • Optional # 1: A dash of everything but the bagel seasoning and/or garlic powder

  • Optional # 2: 1tsp of psyllium husk. It gives the bread more structure.


  • Melt the butter in a microwave safe Tupperware (I use a glass one).

  • Add the egg, almond flour, salt and baking powder. You can add your extras at this stage too. Mix well, then microwave for 90 seconds.

The 90 seconds should be enough to get it done. If the top is still gooey, add another 30 seconds. It all depends on your microwave wattage.

  • Flip the bread over a cooling rack so it doesn’t steam. Give it a couple of minutes to cool down enough to handle; then slice and toast.

I personally don’t calculate the fat and protein.
