Spinach Artichoke Chicken

5 oz spinach

4 oz cream cheese (softened)

1/2 can artichoke hearts chopped

1/4 c. Shredded Parmesan 

1/4 c. Mayo

1/2 tsp. Garlic powder

Salt and pepper

4 boneless skinless chicken breasts 

1/2 c. Shredded mozzarella 

1 tbsp olive oil 

Preheat oven 375. You’ll need a 9x13 greased baking dish set aside.

Pound chicken breasts to 1 inch thick or less. Season both sides with salt and pepper. Set aside. 

In medium bowl mix together Mayo, cream cheese, garlic powder, spinach, pinch of salt and artichoke hearts. Set aside. 

In a large skillet add olive oil and brown chicken on each side 3 min. 

Place chicken breasts in greased dish and top peach one with mixture. 

Bake for 22 min. Top each with mozzarella and bake another 2 min. or until cheese is melted.
