Valentines Shortcake

2 Tbsp butter melted 

3 Tbsp sweetener (I used monk fruit)

1/4 cup almond flour 

1 Tbsp coconut flour 

1 egg

1/2 tsp baking powder 

1/2 tsp vanilla extract 

Pinch salt

Mix above ingredients and cook in the microwave for 1.5 to 2 minutes. Depends on your microwave (mine took 2 minutes)


4 or 5 strawberries (I used frozen)

1 TBSP monk fruit

1/8 cup blueberries 

4 to 5 tbsp water

Bring to a boil, then reduce and simmer for 10ish minutes. 

Top with ready whip
