Bagels for Breakfast! (Keto)

These do take some prep time, and since I was going through all the work I made 3 different versions. The everything bagel is so good with garden vegetable cream cheese and cucumber slices with pepper! 😋

Dry Ingredients

2 cups almond flour

1 Tbls baking powder

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Touch of sea salt and pepper

*Mix well in a bowl

In a separate bowl 

3 cups shredded mozzarella 

*I ran out of mozzarella at 2 1/2 cups, used 1/2 cup of Asiago cheese - super good! 

5 Tbls cream cheese

*Microwave cheeses for 2 minutes, pausing every 30 seconds to stir

3 eggs- 2 for the dough, 1 for egg wash

Combine wet and dry ingredients, mixing very well. Easiest with your hands. If too stringy and won’t mix microwave for another 20 seconds. Separate into 6 equal pieces. For bagels, roll into a ball, poke finger through it and shape into a bagel. Brush with egg wash and everything bagel seasoning (or more Asiago or any cheese/topping combo). For the bagel bites, divide the 1/6th portion in to 3 and shape flat, fill with a tsp or so cream cheese and fit dough around it. Brush with egg wash and roll in everything bagel seasoning, pressing the seasoning in to the dough. 

Bake at 425F 14-16 minutes until browned. 6 net carbs per bagel, 449 calories. To serve, slice bagel in half and top with garden vegetable cream cheese, cucumber slices and fresh cracked black pepper, or any toppings you like.
