I avoid making cookies because most recipes call for 12 or 24 cookies. And if there are 12 cookies there I will eat them. This makes 2 cookies! 



It is the perfect serving and they are delicious


One large egg yolk

1 tablespoon butter melted

1/4 teaspoon vanilla extract

1/3 cup almond flour

2 tablespoons of sweetener

1/8 teaspoon baking powder

2 tablespoons of Sugar free chocolate chips


Line a baking sheet with parchment paper

Combine the egg yolk, melted butter and vanilla and stir with a fork until blended. Add  the almond flour ,sweetener baking powder and mix well with a spoon then fold in the chocolate chips. 

Make two balls out of the dough and place on the lined baking sheet bake for 12 minutes at 350°. 

Transfer the cookies to a wire rack to cool. They will firm up as they cool 

Make sure to press these cookies into shape before baking. 

The dough does not expand like typical cookie dough
