Leprechaun πŸ€ Fluff


Ingredients 

8 ounces cream cheese at room temperature

1 cup heavy cream

1/4 cup mascarpone cheese(I left this out)

1/2 cup Swerve confectioners

1/2 teaspoon  peppermint extract 


Whip the heavy cream in a bowl to soft peaks.  In a separate bowl, add the cream cheese and whip using a hand mixer.  Mix in the mascarpone, swerve confectioners and peppermint extract.


Then mix in the whip cream and blend until smooth and creamy.These can be served in the glass or cup of your choice. I used little plastic shot glasses. 

NOTES

To make this even more special top with chopped Lily’s chocolate chips, 

I like using a little mascarpone in this recipe but, If you don’t have mascarpone cheese, you can sub with more cream cheese. 

The Leprechaun πŸ€ Fluff can serve anywhere from 6 servings on up.  It all depends on the glass or cup you decide to serve it in.
