Potato skins low carb !!!!!!!



Ingredients: 

1 24 oz bag of cauliflower florets 

1 egg

1/2 cup grated Parmesan cheese 

salt and pepp as desired 

1/4 cup of butter 


Toppings 

1/2 cup shredded cheddar cheese

Bacon crumbles as desired 

Chives 

Sour cream 


Instructions:


Preheat oven to 385deg - reg size muffin tin pan sprayed with olive oil 


I steamed florets in a steamer and made sure I over steamed so that’s it’s soft . Added the cauliflower to a bowl, smashed it, added butter , salt , pepper . Mixed - then added egg and Parmesan cheese then mixed Mix thoroughly.

Divide the mixture into greased muffin pan. I filled it 1/2 way(you may have extra left ) Bake for 20/ 25 Min 

Once done Remove from oven - and top w cheese and bacon crumbles. Then Back in oven for about 5 min until cheese is bubbly . Let cool for 5 min 

Use knife so slide around the edges of ‘muffins ‘

Remove  from pan then top w sour cream and chives !! 😋
